Oh my, we just finished these up and they are simply delicious! I found this recipe over at the Pioneer Woman, and good golly, that chick can cook. My hubby said this is his absolute favorite recipe I've made recently, and is even looking forward to the leftovers!!! (I think he almost cancelled our Thank-Goodness-It's-Mothers-Morning-Out-Weekly-Lunch-Date tomorrow just so he could eat these instead . . . CRAZY!) The best part about this recipe though is that I overcame my forever long fear of making a meatball. (Yup, in all my years of cooking I've never, ever, been courageous enough to tackle them – for whatever reason they've scared me!) But they were easy . . . and good . . . and they made my husband happy 🙂 WOOOOOOHOOOOO!Â
I started cooking these while helping my seven year old with her math homework, the entire time I was cooking I had a ballerina dancing around/in-between/IN-TO my legs, and while those meatballs finally finished up I managed to show my ten year how to hot glue the finishing touches of his  fifth grade social studies project together! (A tee-pee of course, what else do fifth graders make?) So if I can make meatballs, ANYONE CAN MAKE MEATBALLS!!!Â
Okay, so here's what you'll need to tackle them at your house too . . .
1 pound Ground Chuck Or Ground Beef Ground Round, Publix Beef or Oven Ready Meatloaf or Seasoned Beef Meatballs, 3.49/lb (you could even just use the pre-made meatballs!), or try Laura's Lean with a $1/1 Laura's Lean coupon (sign up for e-club to access coupon)
*NOTE – this is not a great price on ground beef, but the Laura's Lean might be after the coupon . . . I'm hoping you have a little in your freezer from the last sale!
½ cups Panko Or Other Bread Crumbs We substituted with 3/4 cups Ritz Crackers and they were FABULOUS . . . there's just nothing like a Ritz!  Nabisco Ritz Crackers BOGO $2.99, use $1/1 Kraft or Nabisco Kroger My Magazine School Days (exp 11/17/2010)
1 clove Garlic, Minced
½ teaspoons Salt
Freshly Ground Black Pepper
½ cups Milk
2 Tablespoons Olive Oil Pompeian Extra Virgin Olive Oil BOGO $4.99, use $1/1 HERE
½ whole Medium Onion, Diced Yellow Onions, 3 lb bag, 1.99Â
1 jar (large) Marinara Sauce Prego BOGO $3.39, use $1/2 Prego Italian Sauce Publix Coupon Book Save Big Dream Big (exp 11/30/2010)
12 whole Dinner Rolls (or Slider Rolls) Potato Rolls 12 ct, $1.79, we just used hamburger buns because they were in the freezer 🙂
4 slices Provolone Cheese, Cut Into Four Wedges Each
Mix together first six ingredients. Form into heaping tablespoon sized meatballs (a lot of little meatballs! They reduce size as they're cooking though, and you can always freeze the leftovers!) Heat olive oil in skillet (in the largest pan you can find . . .), then saute onion over medium heat for one minute. Now add the meatballs in and cook for one minute to brown and flip to brown the other side. Add marinara sauce, cover with lid, and simmer for 20 minutes.Â
Slice rolls, then top with meatballs and sauce and provolone.  YUMMMMMM!

That’s what we were missing too Sabrina! I was thinking you could probaly also use shredded mozzarella, but the provolone was pretty good 🙂
