What is Eggs Florentine?
A classic Eggs Florentine is usually Eggs Benedict with hollandaise sauce, a toasted English muffin, and the addition of steamed spinach. However, for this recipe we aren't being that traditional and have switched things up to lighten the calories!
Why is it called Florentine?
The word Florentine relates to the use of spinach leaves in a recipe. It also refers back to recipes developed in the style of the Italian region of Florence.
How to make Eggs Florentine:
You'll need these ingredients to get started:
- butter
- sliced mushrooms
- garlic
- fresh spinach
- eggs
- low-fat cream cheese
To get started making Eggs Florentine, you'll take a large skillet, and melt your butter over medium heat. Add mushrooms and garlic and cook until garlic is fragrant, about 1 minute. Add spinach and cook until spinach is wilted, 2-3 minutes.
Stir eggs into vegetable mixture; season with a pinch of salt and pepper. Cook, without stirring, until eggs start to firm. Using two spatulas, carefully flip. Sprinkle cream cheese pieces over egg mixture and cook until cream cheese starts to soften and eggs are done.
We omitted the typical olive oil and heavy cream to make this dish lighter. I love that it's super easy to make and can be used for breakfast, brunch, lunch, or dinner!

A great BFD option. My only issue is the flippage instructions – per the video above I can’t tell if flippage occurred or made of video magic happened. Either way, I let it set for longer, covered when slotted the cream cheese tbsp, as I couldn’t bring myself to flip since I’d probably wind up with scrambled eggs florentine with maybe half on the floor.
