What is Eggs Florentine?

A classic Eggs Florentine is usually Eggs Benedict with hollandaise sauce, a toasted English muffin, and the addition of steamed spinach. However, for this recipe we aren’t being that traditional and have switched things up to lighten the calories!

Why is it called Florentine?

The word Florentine relates to the use of spinach leaves in a recipe. It also refers back to recipes developed in the style of the Italian region of Florence.

A great BFD option. My only issue is the flippage instructions – per the video above I can’t tell if flippage occurred or made of video magic happened. Either way, I let it set for longer, covered when slotted the cream cheese tbsp, as I couldn’t bring myself to flip since I’d probably wind up with scrambled eggs florentine with maybe half on the floor.
