Broccoli Slaw with Ramen Noodles – This one is a HIT!

This Broccoli Slaw is one of those recipes that I’ve been making since I was newly married. It’s always a WINNER at any family gathering or potluck, can be made ahead (or not) and you’ll ALWAYS be asked for the recipe!

Simple Broccoli Slaw ingredients:

  • broccoli slaw mix
  • ramen noodles
  • slivered almonds
  • green onions
  • canola oil
  • white distilled vinegar
  • soy sauce
  • Worcestershire sauce
  • sugar

How to make broccoli slaw with ramen noodles: 

Start with a package of broccoli slaw mix. This is found by the coleslaw mix in your grocery store. It’s a “healthier” version of coleslaw containing shredded broccoli, red cabbage and carrots.

Next, go ahead and break up the ramen noodles while in their package. Just use the heel of your hand and smash those suckers until they are broken up a good bit. You won’t need the seasoning packet for the recipe.

Toss the slaw mix, ramen noodles, slivered almonds and sliced green onions in a large bowl. If you’ve got some sunflower seeds on hand those work well to replace the almonds if you’re looking for a good substitute.

In a small bowl, whisk together the canola oil, white vinegar (don’t use a cider vinegar), soy sauce, Worcestershire sauce and sugar for the dressing.

Finally, pour the dressing over the slaw mixture and give it a good toss to combine the ingredients. You can either serve this immediately or cover it and refrigerate until ready to serve.

Broccoli Slaw with Ramen Noodles

Ingredients

Slaw

  • 12 oz pkg broccoli slaw mix
  • 2 pkgs ramen noodles, any flavor and broken into small pieces
  • ½ cup slivered almonds
  • 4 green onions, chopped

Dressing

  • ⅓ cup canola oil
  • 6 Tbsps white distilled vinegar
  • 3 Tbsps soy sauce
  • 1 tsp Worcestershire sauce
  • ½ cup sugar

Instructions

  • In a large bowl, combine broccoli slaw mix, broken up ramen noodles, slivered almonds and green onions.
  • In a small bowl, whisk together dressing ingredients.
  • Pour dressing over slaw mixture, and toss to combine. Serve immediately or cover and refrigerate until ready to serve.

Notes

The seasoning packets provided with the ramen noodles ARE NOT used in this recipe.

What is the difference between coleslaw and broccoli slaw mix?

Broccoli slaw mix uses thinly sliced pieces of broccoli, where coleslaw will have cabbage.  Both of the mixes contain sliced carrots, and they’re readily found pre-packaged at your local grocery store.

How long does broccoli slaw last in the fridge?

One of the best things about this slaw recipe is that you can easily make it up in advance.  Once combined, store in an air tight container for up to 3 days.

    Does anyone think the noodles could be cooked and then mixed together for this? The dry noodles don’t sound appealing to me personally.

      Gina, I wouldn’t cook them. They add a nice crunch to the slaw and then soften as time goes from the liquids in the broccoli slaw. Hope you give it a try, it’s really yummy! 🙂

      Try making this the night before so the noodles have time to soak up some of the dressing and soften up. This is a very good slaw.

      You could toast the ramen noodles in a frying pan with just a little butter. That’s how I make mine…and I also toast the almonds.
