Turkey Meatloaf Recipe – Try these Turkey Meatloaf Muffins Tonight!
This ain't your momma's meatloaf! I'll admit, meatloaf isn't one of my favorites. But, my hubby absolutely loves it and since the way to a man's heart is his stomach I go ahead and suck it up and make it for him every so often.
This turkey meatloaf is different though and I honestly really like the way it turned out! We don't eat a lot of beef around here so I'm all for trying to find ways to use ground turkey in it's place and this is the perfect recipe for that!
I've also found that anything made “mini” will be more intriguing to the kiddos and these mini turkey meatloaf muffins are super kid friendly. 🙂
🍴TIP: You can find this recipe (and many others!) in week 10 of our Low Calorie Menu Planning Made Easy Set!
Turkey Meatloaf Muffins Ingredients:
The ingredients are fairly similar to a traditional meatloaf with the addition of some yummy mozzarella cheese and a bit of Worcestershire sauce.
Here's what you'll need to whip this turkey meatloaf recipe up:
- ground turkey
- shredded mozzarella cheese
- yellow onion
- seasoned bread crumbs
- skim milk
- eggs
- Worcestershire sauce
- garlic
- salt
- pepper
- ketchup
- brown sugar
- dry mustard
How to make Turkey Meatloaf:
Go ahead and preheat the oven to 375°F and get a muffin tin greased with some cooking spray.
The next part is disgusting to me but we gotta do what we gotta do to get our bunch fed. Dump the ground turkey, mozzarella, onions, bread crumbs, milk, eggs, Worcestershire sauce, garlic, salt and pepper into a large bowl.
Then dive in and mix this up with your hands until all the ingredients are combined. This will be your turkey meatloaf mixture.
You can either form into small balls and place in the muffin tins or wash your hands and use a large ice cream scoop to get the job done.
Bake these about 35 minutes or until they are golden brown. Don't over bake!
While the turkey meatloaves are baking go ahead and mix up the meatloaf glaze ingredients (ketchup, brown sugar and dry mustard).
After the 35 minutes are up, remove the meatloaves from the oven and spoon the glaze evenly over the mini meatloaves. Bake for another 10 minutes.
Tips for using Ground Turkey:
It's always important to not over-mix meatloaf ingredients as it will dry out the meatloaf. This is especially true with these mini turkey meatloaves since they are so small and over mixing will make them tough.
I like to mix mine by hand (even though it really grosses me out). I've just found this is the best way to get all the ingredients combined really well. So go ahead and get those hands dirty! 🙂
DO NOT overcook these. Since we are using turkey here it will tend to dry out faster than a higher fat ground beef.
For this recipe, we've also included a couple of packages of frozen California mix veggies as a side dish. If you want to jazz those up a bit, feel free to add a bit of butter and season with some garlic salt and pepper. Really any vegetable would be great along side this turkey meatloaf dish, but we love the variety in the California blend.
