Yummy Steak Gyros
If you’re looking to change up your weekly menu a bit, these steak gyros are sure to be a hit! They’re so easy to make and my family loves getting to customize the toppings on their gyro.
This steak uses just a few ingredients for a delicious, versatile marinade. Plus, you can cook the meat on the grill or on the stove, so you can make it anytime of the year!
We usually end up with a couple lunches in leftover and this recipe reheats so well! Here’s how to make these yummy steak gyros.

Ingredients
- Flank or skirt steak
- Olive oil
- Red wine vinegar
- Oregano
- Minced garlic
- Salt & pepper
- Pocketless pitas
- Gyro toppings: tomato slices, sliced red onion, chopped Romaine lettuce, tzatziki sauce, and whatever your family enjoys!

How to make Steak Gyros
This recipe requires a bit of extra time for marinating and it is SO worth it for juicy, flavorful steak!
Prepare your flank steak by trimming off excess fat. Then, in a large dish or Ziploc bag, combine olive oil, red wine vinegar, oregano, and minced garlic. Whisk to combine and then add the meat. Cover and marinate in the fridge for at least 30 minutes or up to 4 hours.
When you’re ready to cook, preheat your grill or stove to medium-high heat. Let excess marinade drip off your steak to avoid burning.
Cook over medium-high for 5-7 minutes per side (for medium rare). Note: adjust cooking time for your desired doneness!
Transfer cooked steak to a cutting board and let rest for 5 minutes before slicing into 1/2″-thick slices.
Meanwhile, warm the pitas and cut in half to create a little pocket for all this yumminess! Add steak and desired toppings, and enjoy warm.
Steak Gyros
Ingredients
- ½ cup olive oil
- 1 tbsp dried oregano
- 1 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1 ½ lb flank or skirt steak, trimmed
- salt
- pepper
- 4 pocketless small pitas, warmed
- 1 cup Romaine lettuce, shredded
- ½ red onion, thinly sliced
- 1 tomato, thinly sliced
- ½ cup tzatziki sauce
Instructions
- In large, shallow bowl, combine oil, oregano, vinegar, and garlic. Add steak and toss to coat. Cover with plastic wrap and marinate for at least 30 minutes or up to 4 hours, flipping steak halfway through. Remove from refrigerator 1 hour before cooking.
- Preheat grill, grill pan, or large cast iron skillet to medium high heat. Season both sides of steak generously with salt and pepper. Let excess marinade drip off steak, then transfer steak to pan. Cook 5-7 minutes per side until golden brown for medium rare.
- Transfer steak to cutting board and allow steak to rest 5 minutes. Slice steak into ½-inch pieces across grain.
- Assemble gyros by stuffing pita halves with lettuce, onions, tomatoes, and steak. Drizzle with tzatziki sauce and serve immediately.
Note: Extended marinating time required.
