Ingredients:
- Chicken breasts
- Avocado oil
- Salt & pepper
- Red bell pepper
- Orange bell pepper
- Red onion
- No-sugar-added Barbecue sauce
- Pineapple chunks (fresh or canned)
- Cilantro to garnish
How to make sheet pan Hawaiian chicken
Preheat your oven to 350 degrees and prep your chicken and vegetables. If your chicken is thick, you can tenderize it a bit with a mallet or rolling pin. Then, cut into bite-sized pieces and add to a bowl. Dice the vegetables and set aside, and cut the pineapple into chunks.
Toss the chicken with 1 tablespoon avocado oil, salt, and pepper. Then, add the vegetables and 1/2 cup no-sugar BBQ sauce and toss to combine.
Spread on top of a parchment-lined 9×13″ baking sheet.
Note: if you’re looking to wash even fewer dishes, go ahead and toss this all together right on your sheet pan!
Bake for 20 minutes. Then, remove from the oven and top with pineapple chunks. Bake another 10-15 minutes until the chicken is cooked through and veggies are tender.
Top with cilantro and extra BBQ sauce, if desired. You’ve got a complete meal this way, or you can pair with a starch like quinoa or rice.
