These adorable bunny cupcakes are perfect for Spring! So colorful and cute – and EASY to make!
Easy Spring Cupcakes

I have spring fever over here and am itching for warm weather and all the bright colors that come with spring! I've been looking forward to decorating, cooking, and treats – and specifically making spring cupcakes.
But, in searching for ideas for cute spring cupcakes, everything looks a bit too complicated and time consuming. Unfortunately, God gave me many gifts but baking and decorating baked goods is not one of them. So, I'm delighted to report that these Bunny cupcakes are SO EASY you'll think you must be doing it wrong. Plus, they are adorable and perfect for Easter.
Here's how I made these sweet bunnies:
Ingredients for Spring Cupcakes:
- Cupcakes, any flavor (you can go a homemade route or store bought. For homemade, I love this yellow cake mix recipe. Because I was going for easy, I opted for a boxed cake mix.)
- White frosting (again, you can make this at home. I went with a can of whipped frosting)
- Regular and mini-sized marshmallows
- White sprinkles
- Sparkling sugar (I found this GREAT Easter set at Walmart with the perfect colors)
- Gel icing (this 4-pack also came from the Easter section at Walmart)
How to Make These Cute Spring Cupcakes:
Begin by baking your cupcakes according to the box instructions or recipe. Give them time to cool completely (you can speed this up by popping them in the freezer).
Frost all your cupcakes with the white frosting.
Dip and roll each cupcake in the white sprinkles until the top is coated. Set aside.
For the bunny ears:
Cut a large marshmallow in half diagonally. You should have two long sides that are sticky. Dip the sticky side in the sparkling sugar (or desired sprinkles).
Using a knife, apply a tiny amount of frosting to the flat side of the marshmallow and stick on your sprinkled cupcake.
For the bunny butt:Â
You will continue to cut your large marshmallows in half diagonally to create a large rabbit foot. Using your gel icing, make three small dots and one large dot at the top on both marshmallow halves.
Apply a small amount of frosting to the flat side again and place towards the bottom of a sprinkled cupcake.
Finally, apply a small amount of frosting to the flat side of a mini marshmallow and stick in the middle of the cupcake, making the tail.
There you have it! Two adorable sets of spring cupcakes for Easter celebrations or spring gatherings. Transport carefully in a cupcake carrier (we like this one that holds 2 dozen cupcakes!) and enjoy! These cupcakes will last 3-5 days in the fridge, but are best enjoyed same-day as the marshmallows tend to dry out.
