Slow Cooker Cashew Chicken (So Tender and Juicy!)

This easy slow cooker cashew chicken dish is full of tender and juicy chicken with an amazing sweet and nutty sauce.  It’s better than takeout!

Slow Cooker Cashew Chicken

If you love the spicy cashew chicken dish from the Cheesecake Factory, this one is going to be a favorite for you!  This delicious cashew chicken is made right in your crock pot so the slow cooker does most of the work for you.  What results is an amazing dinner that tastes like it takes HOURS but really is quite simple to make.  Here’s how to get started!

Cashew Chicken Ingredients:

  • bone in chicken thighs with skin
  • olive oil
  • salt
  • pepper
  • soy sauce
  • apple cider vinegar
  • honey
  • garlic cloves
  • fresh ginger
  • whole cashews
  • green onions
  • brown or white rice (optional)

How to make Cashew Chicken in a Crock Pot:

Start by seasoning your chicken with salt and pepper and bring a large skillet up to medium-high heat.  Add your chicken and brown about 2 minutes per side. Remove the chicken and add it to the slow cooker.

Mix together soy sauce, apple cider vinegar, honey, garlic, and ginger in a small bowl and pour it over the chicken.

Cover and cook for 3 – 4 hours.  Next add in cashews and cook an additional 15 minutes on low.  Top with sliced green onions and serve over rice if desired.

Ingredients

  • 2.5 lbs bone-in chicken thighs with skin
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 1 Tbsp honey
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • 1 cup whole cashews
  • 4 green onions sliced
  • cooked brown or white rice optional

Instructions

  • Sprinkle chicken with salt and pepper
  • In a large skillet, heat olive oil over medium-high heat; add chicken and brown about 2 minutes per side
  • Remove chicken from skillet and place in slow cooker
  • Mix together soy sauce, apple cider vinegar, honey, garlic, and ginger in a small bowl; pour over chicken
  • Cover and cook on low 3 - 4 hours
  • Add in cashews; cover and cook an additional 15 minutes on low
  • Top with sliced green onions and serve over rice if desired

What can I serve with this Slow Cooker Cashew Chicken?

We love to have our crockpot cashew chicken with broccoli or over rice, but really any veggie you want will be delicious with this dish!  A side salad is always a welcome choice too 🙂 If you want to get fancy with your salad, you could try our Copycat Olive Garden Salad or Napa Salad!

Can you freeze cashew chicken?

Yes, you could freeze this recipe! Just be sure to fully prepare the recipe and allow to cool before placing in a freezer safe storage bag or container.

Is it OK to put raw chicken in a slow cooker?

Yes!  Slow cookers are designed to cook raw meats.  You can even put your meat in frozen and it will still turn out! (Just note that you may need to adjust cooking times if you’re using frozen versus raw meat in your cooker).
