Slow Cooker Cashew Chicken

Ingredients

  • 2.5 lbs bone-in chicken thighs with skin
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 1 Tbsp honey
  • 3 cloves garlic minced
  • 1 tsp fresh ginger minced
  • 1 cup whole cashews
  • 4 green onions sliced
  • cooked brown or white rice optional

Instructions

  • Sprinkle chicken with salt and pepper
  • In a large skillet, heat olive oil over medium-high heat; add chicken and brown about 2 minutes per side
  • Remove chicken from skillet and place in slow cooker
  • Mix together soy sauce, apple cider vinegar, honey, garlic, and ginger in a small bowl; pour over chicken
  • Cover and cook on low 3 - 4 hours
  • Add in cashews; cover and cook an additional 15 minutes on low
  • Top with sliced green onions and serve over rice if desired
