How to make bacon-wrapped chicken
This recipe is SO tasty you’d think it takes 15 ingredients and an hour of prep. Thankfully, it’s actually crazy easy to make with just four ingredients!
If needed, start by pounding your chicken breasts so they are an even thickness throughout. Then, pat dry and wrap each breast with two pieces of uncooked bacon. You can use a toothpick to hold the bacon in place if needed.
Meanwhile, preheat the oven to 425 degrees.
Next, cook the chicken in a large skillet on the stove. The goal is to start getting the bacon crispy and begin cooking the chicken, so you’ll cook for 3-4 minutes per side.
Transfer chicken breasts to a greased wire rack placed on top of a baking sheet lined with foil or parchment paper.
In a bowl, combine the jar of red pepper jelly and 3 tablespoons of Dijon mustard. Mix well and set aside 1/2 cup of the mixture. Top each chicken breast evenly with the rest of the jelly mix. Bake 15-25 minutes until the bacon is nice and crispy and the chicken reaches an internal temperature of 165 degrees.
Serve the chicken with the remaining jelly mixture as a dip.
We love to pair this one with our favorite sides like potatoes, corn on the cob, or a nice salad.
