How to make fried rice with quinoa
Start by heating the sesame oil in a large frying pan on the stove. Add the pork and cook until it is nice and brown, then transfer to a plate.
In the same skillet, add the three eggs and scramble. Cook the eggs just until they’re no longer runny and set aside.
Add the pork back to the pan along with the cooked quinoa and two cups of frozen stir-fry vegetables and mix. In a small cup or bowl, combine soy sauce, ginger, garlic, and sriracha. Pour the sauce into the skillet and toss to combine. Cook just until the vegetables are no longer frozen.
Tip: make sure you don’t overcook the veggies – you don’t want them to get soggy!
Add the scrambled eggs back in and mix. Serve immediately and top with sesame seeds, if you want!

Substitutions & Changes
There are a few substitutions or switches you can use to make this quinoa fried rice recipe work for you.
Pork substitutes: sub ground turkey or chicken for the pork as needed or desired.
Veggie substitutes: you can use fresh stir-fry vegetables instead of frozen if it’s what you prefer. Consider steaming separately and adding at the end along with the eggs so they don’t get soggy.
Spice level: You can tweak the spiciness of this recipe depending on your family’s taste. Don’t like it spicy? Just skip the sriracha. Want to kick it up a notch? Add some red pepper flakes to serve!
