Quinoa Fried Rice with Pork

Ingredients

  • 1 ½ lb ground pork
  • 3 large eggs
  • 4 cups cooked quinoa
  • 2 cup frozen stir-fry vegetables
  • 3 tbsp toasted sesame oil
  • 4 tbsp low-sodium soy sauce
  • 1 tbsp sriracha sauce
  • 2 cloves garlic, minced
  • 1 ½ tsp fresh ginger, minced

Instructions

  • In a large skillet, heat sesame oil over medium-high heat; add pork, and cook until browned and crumbly.
  • Transfer meat to a plate, and return skillet to stove.
  • Whisk eggs, and add to skillet. Scramble until no longer runny then remove from pan.
  • Return pork to skillet, add quinoa and frozen vegetables.
  • Mix in sauces, garlic and ginger then toss until warmed and vegetables are no longer frozen.
  • Add eggs, toss to combine, and serve immediately.
