Mexi-Baked Chicken

This mexi-baked chicken takes just 4 ingredients but is absolutely loaded with big flavors!  You can prep this in less than 5 minutes so it’s a great dish when you’re short on time.  It bakes up together in one bubbly, cheesy dish. You’re going to love this one!

Ingredients for Mexi-Baked Chicken:

  • 2 lb boneless skinless chicken thighs
  • 2 tbsps taco seasoning
  • 12 oz salsa
  • 2 cups shredded cheddar cheese

How To Make Mexi-Baked Chicken: 

  1. Preheat oven to 375ºF. Apply cooking spray or avocado oil to shallow, small baking dish.
  2. Place chicken in baking dish and lightly apply taco seasoning to both sides, then pour salsa over chicken.
  3. Bake 45 minutes, uncovered, until internal temperature reaches 165ºF.
  4. Sprinkle cheese evenly over chicken. Bake 5 minutes until cheese melts.

Tips from the chef:

  • Serve with these Cheesy Fiesta Potatoes and a yummy Mexican salad for a perfect meal!
  • If you prefer chicken breasts over thighs, that should work well with this recipe too – just know you may need to adjust your cooking time a bit.
