Mexi-Baked Chicken

Ingredients for Mexi-Baked Chicken:
- 2 lb boneless skinless chicken thighs
- 2 tbsps taco seasoning
- 12 oz salsa
- 2 cups shredded cheddar cheese
How To Make Mexi-Baked Chicken:
- Preheat oven to 375ºF. Apply cooking spray or avocado oil to shallow, small baking dish.
- Place chicken in baking dish and lightly apply taco seasoning to both sides, then pour salsa over chicken.
- Bake 45 minutes, uncovered, until internal temperature reaches 165ºF.
- Sprinkle cheese evenly over chicken. Bake 5 minutes until cheese melts.
Tips from the chef:
- Serve with these Cheesy Fiesta Potatoes and a yummy Mexican salad for a perfect meal!
- If you prefer chicken breasts over thighs, that should work well with this recipe too – just know you may need to adjust your cooking time a bit.
