Ingredients

  • 2 lb boneless skinless chicken thighs
  • 2 tbsps taco seasoning
  • 12 oz salsa
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat oven to 375ºF. Apply cooking spray or avocado oil to shallow, small baking dish.
  • Place chicken in baking dish and lightly apply taco seasoning to both sides, then pour salsa over chicken.
  • Bake 45 minutes, uncovered, until internal temperature reaches 165ºF.
  • Sprinkle cheese evenly over chicken. Bake 5 minutes until cheese melts.
