If you're fixing up some fun for your kiddos this spooky season, these colorful monster cookies are sure to be a HIT! Not only are they cute with little eyeballs (my kids LOVE that touch) and fun monster-y colors, they are delicious, too! This recipe gives the gooiest, softest cookie ever – we just love it!
I love making these cookies during October for kids Halloween parties and to add to my family's plates for spooky-themed lunches and snacks. It's such a fun way to sprinkle in little bits of magic to our school days or Halloween movie nights.
These cookies are surprisingly easy to make (don't let the color fool you!) and just require a little bit of extra time to chill the dough. Here's how to make this fun, yummy treat.
Ingredients needed
- White cake mix (but DON'T mix it up with the box directions)
- 1 stick of softened butter
- 1 egg
- 8 oz package softened cream cheese
- Vanilla
- Food coloring – the neon colors give the most vibrant effect
- Candy eyeballs – I grabbed the best set with a variety of sizes online but you can grab a smaller, one-size at the grocery store this time of year
- Powdered sugar for rolling

How to make colorful monster cookies
Start by mixing the butter, cream cheese, egg, and vanilla with your stand or hand mixer. Add the cake mix and mix until well combined.
Divide the batter into however many bowls you have a color for. When you add the food coloring, be a little generous but also remember you can add more! The darker the color, the more vibrant the cookie will turn out.
Do not add the candy eyeballs until after baking – these will melt in the oven and you'll end up with an actual scary mess!
The MOST IMPORTANT step here is to chill your dough for about one hour before rolling the cookies. Because these cookies are soft and gooey, the batter is sticky and will be nearly impossible to work with if you do not chill ahead of time. Place the dough in the bowls into the fridge or freezer to chill.
Preheat your oven to 350°. Once the dough is chilled, take out one color at a time and roll into about 1″ rounds. Roll these in the powdered sugar to coat and place on a baking sheet lined with a silicone mat or parchment paper. (Don't use cooking spray on a baking sheet as this will discolor the bottom of the cookies too much).
Press down on the ball slightly. Repeat for all colored dough.
I was able to fit about 16 cookies per baking sheet which took two turns in the oven. Bake for about 10 minutes. You want these cookies to be soft and gooey so be careful not to overbake.
Now's the fun part – adding the candy eyeballs! Add the eyes right after the cookies come out of the oven. The tops will be nice and warm and easy to place eyeballs in wherever you'd like – they're supposed to be a bit wonky!

Ingredients
- 8 oz pkg cream cheese, softened
- ½ cup butter, softened
- 1 large egg
- 1 box white cake mix
- ½ tsp vanilla
- food coloring
- ¼ cup powdered sugar
- candy eyeballs
Instructions
- Beat cream cheese, butter, vanilla, and egg until fluffy.
- Add white cake mix and beat until well combined.
- Divide batter into smaller bowls for each color. Add food coloring and mix until completely colored.
- Chill dough for about one hour.
- Preheat oven to 350℉.
- Roll into 1" rounds. Roll in powdered sugar to coat and place on a parchment-lined baking sheet and pat down lightly.
- Bake 10-11 minutes.
- Add candy eyeballs after baking, while cookies are warm.
