Earth Day Cookie Recipe
Earth Day is coming up on April 22nd. We're gearing up for some fun around here to celebrate God's amazing creation! These chewy Earth Day cookies are the perfection addition to our festivities.
This recipe is one of my all-time favorite cookie recipes! The cookies are so soft, chewy, and colorful. Adding color to the dough takes just a few extra minutes of prep for a show-stopping result. Plus, there's a literal “secret ingredient” that saves you a lot of extra time and mix-ins!
Try these Earth Day cookies with your kids, or take them to school for Earth Day celebrations.

Ingredients for Earth Day Cookies
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1 box white cake mix (I used this one, so tasty)Â Cake mix is my “secret ingredient” so there's no dry ingredient mess or prep!
- Powdered Sugar
- Blue and green gel food coloring
How to Make these Chewy Earth Day Cookies
Add cream cheese, butter, egg, and vanilla to a large mixing bowl. Mix on medium until well combined and smooth, about 1-2 minutes. Next, add the cake mix and mix until well combined.
Divide your batter evenly into two smaller bowls. Add blue food coloring to one bowl and green to the other.
Mix until the color is consistent throughout. You can use a spoon or your hand mixer attachment for this.
Chill dough in the fridge for 30 minutes.Â
Prepare a cookie sheet with parchment paper or grease and grab your chilled dough. Sprinkle a thick layer of powdered sugar onto a small plate.
Take a small amount of each color of dough and gently mix together (you don't want to mix your colors completely, but enough that it gives a slightly marbled effect, or the view of Earth!).
Roll dough into a ball. This will be a bit sticky and messy but totally worth it! Roll your dough ball in the powdered sugar to coat, and place onto cookie sheet. Do not flatten.
Repeat until your dough is gone.
Chill again for 30 minutes.Â
Bake at 350 degrees for 12-15 minutes. Don't overbake because these Earth Day cookies are best served soft and warm!
