This is just a simple easy casserole that my hubby loves, and almost all the ingredients are probably sitting right in your pantry! (I love that!) If you're busy at work you could even cook the rice and chicken the night before (or even use pre-cooked chicken), mix up the ingredients when you get home from work, pop in the oven and you'll have dinner ready in 20 minutes (faster than you can swing through the drive-thru!)
Here's what you'll need . . .
1 1/2 cups cooked chicken (whole chicken on sale $1.19/lb., try recipe out HERE, or if you're in a hurry try Hormel Premium Breast of Chicken (BOGO $3.39)
One box wild rice, cooked according to package directios Uncle Ben’s Country Inn Rice BOGO $1.49, use $0.75/2 Uncle Ben’s Products
1/2 c. cheddar cheese hopefully you have some stockpiled, if not Publix brand is cheapest!
1/4 c. margarine or butter
1 can cream of chicken soup $1/2 Campbell's Condensed Cooking Soups
1/2 c. chicken broth Use broth leftover from cooked chicken, or maybe you grabbed some Progresso during last week's BOGO sale! If you have to buy it look for small cans (I think Swanson makes them.)
Cook rice according to package directions. Preheat oven to 350. Mix all ingredients, heat in skillet until thoroughly warmed. Transfer to baking dish. Bake for 20-25 minutes. Serve and enjoy!
