Strawberry Pretzel-Less Salad

This strawberry salad gives you all the flavor of a traditional Strawberry Pretzel salad but is actually PRETZEL-less!

Ingredients for Strawberry Pretzel-less Salad: 

  • pecans
  • sugar substitute
  • butter
  • cream cheese
  • heavy whipping cream
  • sugar-free strawberry gelatin
  • water
  • fresh strawberries

How to make Strawberry Salad: 

  1. Preheat oven to 350°F. Add pecans, 1/4 cup sugar substitute, and butter to food processor. Pulse until nuts are sticky.
  2. Press nut mixture into 13×9-inch baking dish to make crust. Bake for 15 minutes until crust is browned. Let it cool completely.
  3. In medium bowl, using hand mixer, combine remaining sugar and cream cheese. Add in heavy whipping cream and whip until fluffy.
  4. Pour cream cheese mixture over cooled crust. Refrigerate 30 minutes.
  5. In medium bowl, add gelatin and boiling water; whisk until melted. Let cool.
  6. Add strawberries into cooled gelatin. Pour over cream cheese layer.
  7. Refrigerate 4 hours before serving.
  8. Note: Extended refrigeration time required.

TIP FROM THE CHEF: Make sure to let the Jell-O cool a little bit before pouring it over the cream cheese or else it’ll melt!!

  • 1 cup butter melted
  • 8 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 0.6 oz sugar-free strawberry gelatin
  • 2 cups water boiling
  • 1/2 lb large fresh strawberries, about 8 large thinly sliced

Instructions
