Strawberry Pie Recipe
Several weeks ago, I had Strawberry Pie for breakfast. And then a teensy slice again for lunch. And if it's up to me, my sweet husband will make me one more Strawberry Pie so we can enjoy a little more for dessert tonight. 🙂 I think I have a Strawberry Pie addiction.
The very first time that my husband called to invite me out on our first date (I figured he was on the church's evangelism team trying to convince me to go to church . . . really!), I asked him what he'd spent his day doing.
Sure enough, as a twenty-three year old guy right out of college he'd taken his weekend off from work and went strawberry picking, and made a Strawberry Pie just for himself that day. Sure sounded like a good guy to me . . . (Little did I know then that I was hooked!)
So, every year we pack up our kids and head out to strawberry pick, and you can bet they gobble down every berry they can manage while they pick a few too.

This Strawberry Pie was divine.
This is the same pie recipe he used YEARS ago. And it's still just as yummy as it was way back then.
(In fact, maybe even yummier today since it has 23 years of tradition piled in.) 🙂Â
Enough about our strawberry history, you just want the recipe, right? 🙂Â
Strawberries have just started to come in season here, and hopefully we'll all see falling prices on strawberries over the next few weeks and you can enjoy this fresh strawberry pie.
How to Make Strawberry Pie:
Strawberry Pie Ingredients:Â
- baked pie crust
- water
- sugar
- strawberries (store bought are fine – but if you can get your own fresh strawberries they're the best!)
- corn starch
- strawberry Jell-O
Add your strawberries to the crust (be sure they are rinsed and drained well).
Then, add your water, sugar, and cornstarch into a pot and bring to boiling on low heat, until thickened (you'll need to stir this constantly). Next, add 4 Tablespoons of Strawberry Jell-O and allow to cool slightly (it doesn't have to cool completely – just enough so it doesn't make the crust too hot).
Drizzle your Jell-O mixture over the berries and pie shell, then refrigerate until firm. After a few hours in the fridge, slice, and enjoy your Strawberry Pie!
This is fantastic with some homemade whipped cream or Cool Whip on top too 🙂
Strawberry Pie Recipe
Ingredients
- Baked Pie Crust
- 4 Cups Strawberries Rinsed and Drained
- 1 Cup Water
- 1 Cup Sugar
- 1/4 Cup Corn Starch
- 4 Tbsp Strawberry Jell-O
Instructions
- Place strawberries in baked pie crust
- Bring water, sugar, and corn starch to boiling on low heat until thickened (you'll need to stir this constantly)
- Add 4 Tablespoons of Strawberry Jell-O and cool slightly
- Drizzle Jell-O mixture over berries
- Refrigerate until firm, slice, and enjoy!

I just made my first strawberry pie. The jello
Mixture sealed out of pie crust. Wondered what I did wrong?
Note homemade pie crust/ poked holes in crust to bake.

Hmm, Sue ~ Maybe it was too much jello in the pie crust so it leaked. I would recommend using less jello than before so that the next time you make this recipe it might not leak!

My family has made a similar recipe to this for years now and love it. We put softened cream cheese in the pie crust before putting the strawberry mixture in as well as cutting the strawberries up. Absolutely love the cream cheese in it.

I made this last week using a graham cracker crust. The crust was not soggy at all. Next time, I’ll cut the strawberries into smaller pieces. I also brushed the glaze over the strawberries with a pastry brush before drizzling it. My family loved it!

Can you substitute frozen strawberries?

Hi Sue! Hmm, I’m thinking the frozen strawberries may get too mushy for this recipe, but there are some other yummy-looking strawberry pie recipes on Google where you can use frozen berries! 🙂 Hope that helps!

I have been making this recipe for 27 years. I got it from a friend who got it from a friend, etc. Its been around for years. So so yummy……..
