St. Patrick's Day Rainbow Cupcakes
Looking to add some magic to your St. Patrick’s Day celebrations? These rainbow cupcakes are not only super easy to make, but they’re also bursting with leprechaun charm! These little treats will bring a smile to everyone’s face.
Ingredients:
- Cupcakes (I made Funfetti Cupcakes from a box!)
- Frosting
- Piping bags
- Sprinkles
- Air Heads Xtremes
- Marshmallows
Let's make these lucky cupcakes!
- Bake cupcakes according to the package directions. I used green cupcake liners—because, let’s be honest, a little green is a must!
2. Next, frost your cupcakes. I used Funfetti frosting (which comes with sprinkles too) and put it in a piping bag so I could get the perfect “cloudy” vibe. Then I added the sprinkles.
3. For the rainbows, you need to trim about 1-inch off the Air Heads Xtremes candy strip. If the rainbow is too long, it won't keep the arch shape and can flop over on top of your cupcake. No one wants a floppy rainbow! After trimming, put the ends of the candy strip into the frosting of the cupcake in a rainbow arch.
4. I also used marshmallows on the ends of each candy strip to help hold the rainbow candy in place. The marshmallows act as sweet “clouds” at the end of the rainbow!
