Easy St. Patrick's Day Breakfast
If you're looking to add a little bit of extra fun to holidays with your kids (without going overboard), this St. Patrick's Day breakfast is perfect! Grab a few breakfast items you probably already have on hand or can grab at the grocery store that don't bust your budget, and you can create a touch of magic for your family.
Did you know we celebrate St. Patrick's Day on March 17 to commemorate the day patron Saint Patrick died in the year 492? Saint Patrick was a British priest who overcame being enslaved and persecuted and is credited with establishing Christianity in Ireland.
Four Leaf Clover Waffles
If you have a heart-shaped mini waffle maker from Dash, you can easily make a clover out of waffles. Whip up your favorite waffle mix and add green food coloring. Cook the waffles as normal to get the heart shape.
My waffle maker has a heart plate on the bottom and regular waffle on top, so I used my kitchen shears to cut the excess off to get just a heart.
Make four hearts and arrange them in the shape of the clover! I added a little stem from what I trimmed off, but it looks adorable stemless as well.
St. Patrick's Day Breakfast Fruit Rainbow
Another fun addition to your table is a rainbow (complete with a pot of gold) made out of your family's favorite fruit.
To create this, just grab fruits (or veggies) of each color and arrange in the shape of a rainbow. Here are some ideas but use what you have or can easily grab without spending a bunch:
Red – Strawberries, raspberries, cherries, watermelon
Orange – Oranges, clementines, peaches, cantaloupe
Yellow – banana, pineapple, golden kiwi
Green – kiwi, grapes, apples, honeydew
Blue/Indigo/Violet – blueberries, blackberries, red grapes, cherries
To make the clouds, I used mini powdered donuts. You could also use donut holes, whipped cream dollops, or a yummy fruit dip in a bowl. For the pot of gold I used yellow M&Ms because I had them on hand. You could use golden Oreos, chocolate coins, or any candy wrapped in gold like Rolos, etc.
My kids loved this extra gesture as a surprise in the morning, and it took me about 15 minutes to set up, and I was able to enjoy my coffee while we chatted and ate 🙂

I love the idea of having an edible rainbow with a pot of gold for St. Patrick’s Day! I have bananas and blueberries and tomorrow I will get the rest of the fruit for my rainbow. Thanks for such a fun idea.
