Slow Cooker Barbecue Stuffed Potatoes
This is a recipe I posted wayyyyyy back in 2012. It's SUCH a yummy and frugal recipe to have in your back pocket!
With what we are all going through right now with being cooped up in our houses, I'm hoping that most of you have everything in your pantry you need for this recipe right now. It's a very forgiving recipe. Feel free to just GO FOR IT with what you have on hand. 🙂
Also, if you're anything like me, shopping with a bunch of kids tagging behind you in the summertime is at the very bottom of your what-I'd-just-love-to-do-this-summer list. Thankfully, my stockpile has saved me from making way too many grocery runs this summer! As I was hunting down a recipe to make this week, I decided it would be soooo nice if I could find something that we had ingredients on hand for. However, this one fit the bill.
In this recipe, a simple slow cooker barbecue chicken tops plain baked potatoes for a SUPER cheap dinner. This is perfect for a busy night. Want to add some cheese? How about some BBQ Sauce? Yes please!

Slow Cooker Barbecue Potatoes
Luckily, we had a few baking potatoes left over from grilling night last week. And thanks to using coupons, I had enough barbecue & Worcestershire sauce to last me at least until my son heads off to college. (Okay, not really, but we do have quite a few bottles in the pantry!) I also had two bottles of barbecue sauce all but cleared out in the fridge, and didn't want them to go to waste. I let them sit upside down a bit to use up every last bit before throwing them away.
Slow Cooker Barbecue Stuffed Potatoes
Equipment
- slow cooker
Ingredients
- 1 1/2-2 lbs boneless, skinless chicken breasts
- 18 oz bottle barbecue sauce
- 1/2 cup Italian salad dressing
- 1/4 cup brown sugar
- 2 tsps Worcestershire sauce
- 4-6 baking potatoes
- optional toppings: cheese, sour cream, and chives
Instructions
Chicken
- Place chicken breasts in bottom of slow cooker.
- Mix together barbecue sauce, Italian dressing, brown sugar and Worcestershire sauce. Pour on top of chicken.
- Cover and cook on low 5-6 hours or on high 3-4 hours.
- Meanwhile, bake potatoes in oven or cook in slow cooker.
- Shred chicken and serve over potatoes; add desired toppings.
Potatoes
- Wash and dry potatoes; prick all over with a fork.
- Rub each potato with ½ teaspoon olive oil and sprinkle with kosher salt; wrap in aluminum foil.
- Place in slow cooker; cover and cook on low 8-10 hours.

I’ve seen on Pinterest where you can put Baked Potatoes in the crockpot on top of the meat you are cooking…I wonder if that would work with this? I’m gonna try it next week, and I’ll try to remember to let you know 🙂 Thanks for the recipe!

I actually had that thought today as I posted it Brandi…. it seems like it would work, but I hated the idea of cooking the potatoes on top of the meat, and didn’t really want to cook them in foil either? I was thinking it would be awesome if there was an attachment you could buy for your crockpot that could be a separate shelf on top (kind of like a grill grate!) If you try it, let me now how it goes! 🙂

I have seen that you can ball up foil and cook things on top of it. I haven’t tried it, but maybe an empty tuna can or two(covered in foil?) and used like a shelf, would work as well. I am going to try the BBQ stuffed potatoes recipe this week. Thanks for sharing 🙂

How about a rack put over chicken stuff. It will be in the sauce & all but you could put potatoes on top. Don’t know if that would work. Lol

I recommend smaller potatoes if you do try it. The larger ones don’t cook as well.
Just wrap in foil and put in the crock pot. I place a piece of foil over the meat first then add potatoes. or use a wire cooling rack as a shelf. I had one break so I just cut it to fit my crock pot.and I jb welded a couple of nuts to the bottom as feet.

My husband loves baked potatoes, but I’ve never made them. (I personally don’t like potatoes unless they’re called french fries.)
This recipe looks simple and I’m going to file it away to make when the weather cools down and we need something hearty.
