Sausage Stuffed Zucchini – Great for ANY Time of Year!

I don’t know how a recipe with only 4 ingredients packs so much flavor but these Sausage Stuffed Zucchini definitely do!

The ingredient combination for these just works! You won’t be disappointed with this delicious, low carb and fun recipe. 🙂

Grilled Sausage Stuffed Zucchini Ingredients

Ingredients needed:

  • zucchini
  • ground mild Italian turkey sausage (or pork Italian sausage)
  • canned diced tomatoes and green chiles
  • grated parmesan cheese

Here’s how to make these delicious sausage stuffed zucchini: 

Preheat grill to low heat. If you don’t have a grill available, you can use a grill pan inside too.

Split the zucchini in half lengthwise, and spoon out seeds from zucchini halves.

In a medium bowl, combine sausage, tomatoes and ½ cup Parmesan cheese; mix well.  If you like things spicy, you could also use hot Italian sausage, but we went with a milder version.  You can also add your salt and pepper to taste. 

Next, fill zucchini halves evenly with sausage mixture, pressing gently; sprinkle tops with remaining ¼ cup cheese.

Finally, grill, covered with grill lid, 45 minutes or until sausage is no longer pink.

Can you make Italian Sausage Stuffed Zucchini ahead of time?

Yes! I’ve done this several times and it works out perfectly. Just follow the instructions on assembling the zucchini shells and refrigerate them until you’re ready to make them. I recommend only doing this the day you will cook them.

  • 6 large zucchini, cut in half lengthwise

Instructions

  • Preheat grill to low heat.
  • Spoon out seeds from zucchini halves.
  • In a medium bowl, combine sausage, tomatoes and ½ cup Parmesan cheese; mix well.
  • Fill zucchini halves evenly with sausage mixture, pressing gently; sprinkle tops with remaining ¼ cup cheese.
  • Grill, covered with grill lid, 45 minutes or until sausage is no longer pink.

    Hi! I am new to PPP. I see your FB posts and decided to look into it a little further. I have a couple of questions for you:

    1. In this zuccini recipe, can it be baked or air fried instead of grilled?
    2. I am looking for healthy make-ahead/freezer meals that can be cooked in quickly each night in the instant pot, oven, or in my crock pot. I would like to get a recipe box, but am not sure which one to start with.
    3. I have one daughter that is in med school and expecting her first child in September, and one daughter who is an x-ray/CT tech whose getting married in November so I was thinking that a recipe box my be perfect for both of them with their crazy schedules. I would love advice on which box would be good to start them out with. One of them is gluten free as well. I saw your bundle deal and wonder if I can get 2 or 3 of the same boxes with that deal. That way I can give them each one and keep one for myself.

    Any advice is much appreciated as it is a bit overwhelming at first to know what is going to be best for my situation.

      Hey Stacy! Welcome to the happiest little corner on the internet! You can definitely bake or air fry the zucchini.
      The freezer box would probably be a good one to start with. The box includes different cooking methods. Some are baked or slow cooked.
      As far as the bundle, you can purchase any combination of the boxes. If you want them all three to be the same that would work. Hope this helps!
