Start by cooking your sausage until it is browned and crumbly.  Drain the fat off the meat well.

Dip Ingredients in Slow Cooker

Next, add all of your ingredients into your slow cooker (don’t drain the diced tomatoes and green chiles).  Cover with the lid and cook on low for 2 – 4 hours, and be sure to stir the mixture every hour until it is completely melted.

Then, turn your slow cooker to the warm setting until you are ready to serve.  Prepare your tortilla chips, broccoli, or pepper strips that you are serving with and then enjoy!

Chicken Rotel Dip

One of the BEST things about this dip recipe is that you can absolutely customize it to your needs.   If you don’t want to have a Rotel Sausage Dip, simply leave out the sausage and you have a great appetizer suitable for vegetarians.

If you’d like to turn it into a Chicken Rotel Dip, simply add cooked chicken breasts (about 2 large) instead of the sausage.

Feel free to add in ground beef instead of sausage too.  Or switch it up and add cream cheese instead of sour cream.  There truly are so many ways to switch up this dish to whatever you like.

You can also customize this even more by adding in extra seasonings, jalapeno peppers, black beans, or green onions.

If you want to make this quicker and don’t have time for the slow cooker, you can also follow the steps above and make this on your stove top.  Just be sure to cook it over medium high heat and then reduce to low once all items are melted together.

My father made this dip with cream cheese instead of sour cream and no sausage for every party he threw starting in the 60s. I loved it. Mine never turns out as well as his did but I’m going to try again in his memory!
