Slow Cooker RoTel Dip – The Perfect Appetizer!
Let me introduce you to my kids' FOREVER FAVORITE recipe – Slow Cooker Rotel Dip.
My whole family loves this meal. It's perfect for game day or when you're wanting a quick appetizer.
This is a very versatile recipe that can be customized to flavors that your family enjoys. And the very BEST part of this Rotel Sausage Dip is that it can be made right in your slow cooker!
Crockpot Rotel Dip Ingredients:
This appetizer only has 4 ingredients to create this delicious Rotel cheese dip (only 3 if you make a meatless version!).
- Velveeta cheese
- breakfast sausage (mild Italian or hot)
- Rotel tomatoes and green chiles (mild or hot)
- sour cream
You can serve this with tortilla chips, pepper strips, and even broccoli with this dip!
How to Make Slow Cooker Rotel Dip:
Start by cooking your sausage until it is browned and crumbly. Drain the fat off the meat well.
Next, add all of your ingredients into your slow cooker (don't drain the diced tomatoes and green chiles). Cover with the lid and cook on low for 2 – 4 hours, and be sure to stir the mixture every hour until it is completely melted.
Then, turn your slow cooker to the warm setting until you are ready to serve. Prepare your tortilla chips, broccoli, or pepper strips that you are serving with and then enjoy!
Rotel Dip Recipe
Ingredients
- 1 lb Breakfast Sausage Roll
- 2 lb Velveeta Cheese
- 2 10 oz Rotel Diced Tomatoes and Green Chiles Use hot or mild (your preference!)
- 16 oz Sour Cream
Items for Dipping
- Tortilla Chips
- Pepper Strips
- Broccoli or Other Vegetables
Instructions
- If you're including meat, cook sausage until browned and crumbly; drain well
- Add all ingredients to a slow cooker.
- Cover and cook on low 2-4 hours, stirring every hour until mixture is completely melted.
- Turn the slow cooker to the warm setting until you're ready to serve.
- Serve with tortilla chips, pepper strips, broccoli, or other vegetables.
One of the BEST things about this dip recipe is that you can absolutely customize it to your needs.  If you don't want to have a Rotel Sausage Dip, simply leave out the sausage and you have a great appetizer suitable for vegetarians.
If you'd like to turn it into a Chicken Rotel Dip, simply add cooked chicken breasts (about 2 large) instead of the sausage.
Feel free to add in ground beef instead of sausage too. Or switch it up and add cream cheese instead of sour cream. There truly are so many ways to switch up this dish to whatever you like.
You can also customize this even more by adding in extra seasonings, jalapeno peppers, black beans, or green onions.
If you want to make this quicker and don't have time for the slow cooker, you can also follow the steps above and make this on your stove top. Just be sure to cook it over medium high heat and then reduce to low once all items are melted together.
