Ingredients for Pork Chili Verde
- Pork tenderloin
- Yellow onion
- Garlic
- Poblano peppers
- Salsa verde
- Green chile peppers
- Unsweetened coconut milk
- Fresh limes
- Cumin
- Black pepper
- Cannellini beans
- Fresh cilantro
How to make Chili Verde in the Crockpot
Start by dicing and slicing some of your ingredients – you'll need to cut the pork tenderloin into large pieces, and then dice your onion, poblano peppers, and mince the garlic (I also love to use pre-minced garlic to make it easy on myself!).
Next, place all of the ingredients except the beans into your slow cooker. Salt and pepper to taste. Cover, and cook on low 7-8 hours or on high 3-4 hours.
When cooking time is complete, remove the pork and shred (you can use two forks or your hand mixer and a deep bowl for this). Return the meat to the crockpot and stir in both cans of rinsed, drained beans.
Cover, and cook on high for about twenty minutes, Top with fresh cilantro and enjoy!
Slow Cooker Pork Chili Verde
Ingredients
- 1 ½ lb pork tenderloin, cut into large pieces
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 4 poblano peppers, seeded and diced
- 16 oz jar salsa verde
- 4 oz can diced green chile peppers
- 13.5 oz can full-fat unsweetened coconut milk
- zest of 2 fresh limes
- 4 limes, juiced
- 2 tsps ground cumin
- salt and ground black pepper
- 2 15 oz cans cannellini beans, rinsed and drained
- fresh cilantro, to serve
Instructions
- Place all of the ingredients except the beans into a slow cooker. Add salt and pepper to taste. Cover and cook on low 7-8 hours or on high 3-4 hours.
- Remove pork and shred using 2 forks. Return meat to the sow cooker, and stir in the beans.
- Cover, and cook on high 20 minutes more to heat through.
- Top with fresh cilantro to serve.
