Slow Cooker Pork Chili Verde

Ingredients

  • 1 ½ lb pork tenderloin, cut into large pieces
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 poblano peppers, seeded and diced
  • 16 oz jar salsa verde
  • 4 oz can diced green chile peppers
  • 13.5 oz can full-fat unsweetened coconut milk
  • zest of 2 fresh limes
  • 4 limes, juiced
  • 2 tsps ground cumin
  • salt and ground black pepper
  • 2 15 oz cans cannellini beans, rinsed and drained
  • fresh cilantro, to serve

Instructions

  • Place all of the ingredients except the beans into a slow cooker. Add salt and pepper to taste. Cover and cook on low 7-8 hours or on high 3-4 hours.
  • Remove pork and shred using 2 forks. Return meat to the sow cooker, and stir in the beans.
  • Cover, and cook on high 20 minutes more to heat through.
  • Top with fresh cilantro to serve.
