What is flat iron steak?
If you've never made flat iron steak, you may be wondering what this cut of meat is! Flat iron steak is taken from the upper portion of the top blade roast. The flat iron (it supposedly got it's name because it looks like an old-fashioned metal flat iron) is uniform in thickness and rectangular in shape. This makes it perfect for grilling because it's all the same thickness.
It also has some great marbling (see above) which means it’s got a great rich beefy flavor. Flat iron steaks are also quite affordable when comparing to other cuts of beef like a good filet or rib-eye. So this penny pincher is ALL about that!
Is flat iron steak tender?
Absolutely!!
You might be scared that this cut of beef might be tough and I don't blame you. As long as it's cooked correctly it's incredibly tender. ❤️
How should a flat iron steak be cooked?
I think the best way to cook a flat iron steak is on the grill, but I've also had great success placing it under a broiler for about 10 minutes too! I would think it would be absolutely divine cooked in a hot skillet. A pan sear from a cast iron would be delicious!
Whatever way you choose to make this cut of steak, you'll just want to let it soak in a flavorful marinade before cooking. This really enhances the flavor and ensures a perfect steak every time. 🙂
How do you grill a flat iron steak?
This steak is very easy to grill. Marinate the steak, then grill it to medium-rare or medium. Let stand for 5-6 minutes, and make sure that it is thinly sliced against the grain. Couldn't be any simpler and really a great bang for your buck!
Careful to not confuse flat iron steak with flank steak!
What's the difference between flat iron and flank steak?
I get asked this a lot since getting into the menu planning business so here ya go!
A flat iron steak is cut from the shoulder area of the cow whereas a flank steak is cut from the belly muscle. Both steaks are extremely flavorful and tender (when seasoned correctly and not cooked above medium), but the flank steak is a bit leaner than the flat iron.

Now that you're well versed with where the flat iron steak comes from and all the things, let's get to this recipe! Whew! I mean, look at this beauty – I can't wait!
First you'll want to whisk all the marinade ingredients together.
Get that steak to marinating and let it do it's thing for at least 30 minutes.
Preheat your grill while you're letting the steak come to room temperature.
This is also a good time to mix the butter, cheese, green onion and pepper together to make the gourmet butter. Yum!
Place that baby on the grill (preheated to medium-high) for 6-8 minutes per side. If you can handle it being on the pink side it really is more tender this way. 🙂
Patience is a virtue right!! You'll need some while you let the steak rest for about 10 minutes before slicing across the grain to serve.
Give it a good dollop of gourmet butter and the anticipation will just about do you in, ha!!

Here are a few side dish ideas to serve with this steak –Â
I like to toss some fresh asparagus with olive oil and pop on the grill. Just turn them every few minutes and they cook fast. Sprinkle with kosher salt and they are super yummy!
I do corn on the cob on the grill in a similar fashion. Both of these side dishes can be grilled at the same time the steak is grilling and are a perfect compliment!
I also think my One Dish Corn Casserole would be pretty amazing alongside this flat iron steak as well.
Baked potatoes, side salad and of course my Homemade Bread are some other suggestions.

Grilled Flat Iron Steak with Gourmet Butter
Ingredients
- 2 lb flat iron steak
- 1/4 cup olive oil
- 2 1/2 Tbsps red wine vinegar
- 3 cloves garlic, minced
- 1 Tbsp cracked black pepper
- 1 tsp dried rosemary leaves
- 1 tsp dried oregano
- 1/4 tsp kosher salt
- 3 Tbsps softened butter
- 1 oz crumbled feta, goat or blue cheese
- 1 Tbsp chopped fresh green onion
- pinch of cracked black pepper
Instructions
- Whisk together olive oil, red wine vinegar, garlic, pepper, rosemary, oregano and salt.
- Place the flat iron steak in a large size zip-top bag; pour marinade over and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat and lightly oil the grate. Remove steak from marinade and allow to stand at room temperature for 15 minutes while the grill warms.
- Mix together the butter, cheese, green onion and pepper and set aside.
- Grill steak 6-8 minutes per side or to desired degree of doneness. Let rest 10 minutes before slicing thinly across the grain. Serve with a dollop of the gourmet butter.

If you were to broil or pan sear what would the timing be?

Hi Josie! Hmm, it will depend on the thickness of the steak, but you’d probably want to broil it about 5-10 minutes per side or pan sear for 4-7 minutes per side (and let it rest for about 5-10 minutes before cutting). You can probably find some helpful recipe guides on Google for the best cook times ~ hope that helps! 🙂
