In a medium bowl, mix graham cracker crumbs and melted butter together. Press into pan and bake 8 minutes. Allow to cool while preparing filling.
Beat cream cheese 1 minute using an electric mixer.
Beat in yogurt, and add your egg whites, sugar and flour until mixture is smooth and creamy, about 3 minutes. Add lemon juice and vanilla and beat an additional 1 minute until combined. Fold in chocolate chips.
Spread the cheesecake filling over crust. Bake 25 minutes, covering with aluminum foil after 20 minutes to prevent browning.
Nearly cool completely for about 20 minutes to room temperature, then refrigerate for at least 3 hours. Lift out of the pan and cut into squares to serve.
Tips for making these cheesecake bars:
You'll want to be sure and line your baking pan with either aluminum foil or parchment paper.
I prefer to use parchment paper. When you leave a bit hanging over the edges you can easily lift out the bars after cooling. This makes for easier cutting of the bars too. 🙂
To keep the calories lower than regular cheesecake we've used 0% plain Greek yogurt and the 1/3 less fat cream cheese.
It's important to let the cheesecake bars cool in the refrigerator at least 3 hours before cutting or serving. These are perfect to make the day before so they have plenty of time to cool and they hold up wonderfully.
