Let me just preface this by saying: I am not a scalloped potatoes and ham recipe kind of girl. Give me some chicken salad, or chicken and dumplings any day, but this one wasn’t something I was all that excited about trying out. However, after stocking up on a ton (okay, not really a ton, but a bunch of potatoes) at Dollar General Market earlier this week, I knew I had to come up with some way to use them. And this one worked.

I asked my husband if he’d like to try a scalloped potatoes and ham recipe, and he was thrilled. (In fact, when I told him it didn’t sound all that exciting he said ~ “you know, we really are just made different, huh?”) 😉  So, to appease him and to use up what was in the pantry, I tried it out.

You know what? It was good. Really, really good, and my kids gobbled down ever bit on their plates. Success!

I served the casserole with some green beans, applesauce, and these Simple 7Up Biscuits (a treat around here!) . . . yum!

Here’s how to make your man and family happy too. 😉

Am I missing something? What do you do with the other half of the potatoes? Recipe looks good.
