Let me just preface this by saying: I am not a scalloped potatoes and ham recipe kind of girl. Give me some chicken salad, or chicken and dumplings any day, but this one wasn't something I was all that excited about trying out. However, after stocking up on a ton (okay, not really a ton, but a bunch of potatoes) at Dollar General Market earlier this week, I knew I had to come up with some way to use them. And this one worked.
I asked my husband if he'd like to try a scalloped potatoes and ham recipe, and he was thrilled. (In fact, when I told him it didn't sound all that exciting he said ~ “you know, we really are just made different, huh?”) 😉  So, to appease him and to use up what was in the pantry, I tried it out.
You know what? It was good. Really, really good, and my kids gobbled down ever bit on their plates. Success!Â
I served the casserole with some green beans, applesauce, and these Simple 7Up Biscuits (a treat around here!) . . . yum!

Cheesy Scalloped Potatoes and Ham Casserole
Ingredients
- 8 potatoes peeled and sliced into 1/4" slices
- 1/2 cup milk
- 1/4 cup sour cream
- 1/4 cup butter
- 1/2 cup shredded Cheddar cheese
- 1 pound ham diced
- 1/4 tsp garlic powder or to taste
- 1/4 tsp onion powder or to taste
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup shredded Cheddar cheese
- green onions optional
Instructions
- Slice and boil potatoes for 20 minutes or until tender.
- Mix HALF the boiled potatoes with sour cream, butter, milk, and shredded cheese.
- Use potato masher or fork to blend well, until potato mixture is smooth.
- In a separate bowl, mix together ham, garlic powder, onion powder, salt and pepper.
- Add ham mixture and all remaining potatoes to potato mixture, and give it a good stir.
- Pour into greased 9x13 casserole dish, top with additional 1/2 cup cheese.
- Bake at 350 for 20-30 minutes, or until cheese on top is bubbly.
- Garnish with green onions ~ enjoy!
