Cashew Crusted Chicken

You can whip up this tasty dish in just a few minutes and have dinner on the table your family. This chicken is the perfect mix of sweet + salty, and packed with flavor. You'll never have the urge to call for Chinese take-out again!

Ingredients needed
- Chicken
- Apricot preserves
- Dijon mustard
- Curry powder
- Chopped cashews
How to make Cashew Crusted Chicken
Start by preheating your oven to 375°F, and lightly grease a 9×13″ baking dish.
We're going to make the tastiest glaze to coat the chicken with. In a skillet on the stove, combine a jar of apricot preserves, 1/4 cup Dijon mustard, and 1/2 tsp curry powder. Cook this mixture over low heat, stirring constantly until everything is nicely melted and smooth.
Next, coarsely chop your cashews a bit. You don't want them too fine where they're gritty, and you don't want whole pieces either.
Going one by one, coat each chicken breast in the sauce on all sides, and roll in the chopped cashews. Place into your prepared baking dish.
I like to pour out a little bit of sauce each time only a plate so I can save any to use for dipping without putting the raw chicken into it. You can also boil the remaining sauce before dinner and serve on the side.
Bake chicken 20-30 minutes until cooked through. Enjoy!

Ingredients
- 1 ½ lbs boneless, skinless chicken breasts
- 12 oz jar apricot preserves
- ¼ cup Dijon mustard
- ½ tsp curry powder
- 1 cup coarsely chopped cashews
Instructions
- Preheat oven to 375°F.
- In a large skillet, combine preserves, mustard, and curry powder, and cook over low heat, stirring constantly until preserves are melted and smooth.
- Place cashews into a shallow dish or pie plate. Dip chicken breasts in skillet sauce, then roll in nuts to coat. Place into a lightly greased 13x9-inch baking dish.
- Bake 20-30 minutes or until chicken is cooked through. Boil any remaining sauce, and serve on the side.
