Preheat oven to 375°F.
In a large skillet, combine preserves, mustard, and curry powder, and cook over low heat, stirring constantly until preserves are melted and smooth.
Place cashews into a shallow dish or pie plate. Dip chicken breasts in skillet sauce, then roll in nuts to coat. Place into a lightly greased 13x9-inch baking dish.
Bake 20-30 minutes or until chicken is cooked through. Boil any remaining sauce, and serve on the side.
