All summer I have waited to post this recipe in hope that we'd actually have a little time to enjoy it at our house too, but it's just not happening! It comes from The Weber Big Book of Grilling Cookbook, and the recipe is so good that my hubby, (not me!), even wrote at the top of the recipe “very good, easy”. (He's nota guy who brags on food all the time, so “very good” means a lot!) If you're planning to grill a little this weekend these would be an easy yummy meal to prepare!
Here's what you'll need . . .
6 tablespoons margarine or butter (we use margarine)
2 teaspoons minced garlic
1 tablespoon fresh lemon juice (we always use the kind in the bottle, even though the recipe calls for fresh!)
2 tsp. thyme
2 tsp. paprika
1/2 tsp. kosher salt
1/4 tsp. cayenne
1 lb. shrimp in their shells On Sale $4.99/lb.
To make the marinade, melt butter in small saute pan over medium heat. Add the garlic and cook, stirring occasionally until soft, 2-3 minutes. Remove from heat and add remaining marinade ingredients. Stir and allow to cool to room temperature.
Using a sharp knife split open the back of each shrimp and devein it. Place the shrimp in a large, resealable plastic bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl and refrigerate for 20-30 minutes.
Remove the shrimp from the bag and discard the marinade. Grill over direct high heat until the shrimp are just opaque in the center and firm to the touch, 2-4 minutes, turning once halfway through grilling time. Remove from the grill and serve warm or at room temperature.
