Crockpot Mediterranean Chicken
You'll never believe this Slow Cooker Mediterranean Chicken is crockpot food! The combination of the Greek flavors are so intense and flavorful making this chicken taste so fresh and absolutely delicious. Your family will love this one!
Ingredients needed:
- boneless, skinless chicken breasts
- salt and pepper
- onion
- Kalamata olives
- roasted red peppers
- fresh lemon juice
- garlic
- Italian seasoning
- feta cheese
- fresh basil, optional

How to make mediterranean chicken in a crock pot:
- Season chicken with desired amount of salt and pepper. In a large skillet, take seasoned chicken and cook over medium-high heat 1-2 minutes on each side until browned. Add the chicken to a greased slow cooker.
- Add onions, olives and red peppers to slow cooker. Tuck these around the sides of the chicken so the chicken isn’t covered.
- Whisk together lemon juice, garlic and Italian seasoning; pour over chicken.
- Cover and cook on low 4 hours or on high 2 hours. Sprinkle with feta cheese, and garnish with fresh basil, if desired.
This one is SO full of flavor and it's great that the prep for this meal will take you less than 30 minutes (minus the cooking times for the slow cooker). You could get even more creative and add in artichoke hearts and cherry tomatoes too – they'd go perfectly with this one!

- 12 oz jar roasted red peppers, roughly chopped
- 2 tbsps fresh lemon juice
- 3 cloves garlic, minced
- 3 tsps Italian seasoning
- 1/4 cup crumbled feta cheese
- fresh basil for garnish, optional
Instructions
