Have you heard about Christy Jordan at Southern Plate? Well she's a local girl (really local for me – we live in the same town!), who's just released her first cookbook and has a HUGE blog with oodles of yummy Southern recipes! I keep thinking that I'll see her someday walking through Publix (did I mention we live in the same town?) but from looking at her photos I think she's a Wal-Mart shopper . . . it's hard not to love a lady who shows up in Southern Living magazine (check it out this month), and still shops at Walmart 🙂 (But someday I'm going to meet her and teach her how to shop at Publix, she doesn't know what she's missing!)
Well, I saw this recipe yesterday on her site and was so excited because it fits into my yummy, cheap & easy meal plan this week! I had been searching & searching for another bargain meal when I happened to see her photo of Zatarain's (which of course, is BOGO at Publix this week . . . I bet she didn't know that!) YAAAYYY for another yummy, cheap & easy meal! Here's what's cooking up in my crockpot even as we speak . . .
Update – we just finished this one up and it was so good – even my kids ate it without whining . . .which is almost a miracle around our house!
Slow Cooker Chicken and Rice (courtesy of Southern Plate)
4 boneless, skinless chicken breasts I'm betting you have some in your stockpile, if not Kroger has it for $1.99/lb.
8 oz. box Zatarain's Yellow Rice, cooked according to directions on box Zatarain's BOGO $1.99 , use $0.75/2 Zatarain’s Rice, Pasta Mixes or Frozen Meals or $1/2 Zatarain’s Rice or Pasta Mixes 9/19/2010 RP Insert (exp 11/14/2010)
1 Large Onion, chopped I followed Christy's suggestion and used a Vidalia onion
1 cup cheddar cheese Sargento Shredded Cheese On Sale $2, use $1/2 Sargento Shredded Cheese from Yellow Advantage Buy Flier
1 10.5 can cream of chicken soup I used fat free, $1.50/3 Campbell's Condensed Great for Cooking Soups
1 15 oz. can whole kernal corn, drained Green Giant Canned Vegetables (4 pack) BOGO $4.99
Place chicken in bottom of slow cooker. Add onions, then cream of chicken soup over top of that. Cook covered on low 7-8 hours, or high 3-4 hours. Just before serving, add in cheese, corn, & cooked rice, and stir until all thoroughly warmed. Serve hot, and enjoy!

I think as long as it’s cooked rice you should be okay, but the seasoning in the Zatarain’s definitely added some flavor!

Has anyone tried to supplement this for the BOGO rice? I’m making it now and debating. Just realized the BOGO rice is NOT what the recipe calls for. hmmm

I had that same debate in the grocery aisle and forgot to change it Elizabeth! I think it would be okay, but I was afraid I’d mess it up & make my hubby grouchy 🙂 Let me know if it works!

Hi Laurie, I made this for my husband and children. (I don’t eat chicken). My daughter said she didn’t want it, she wanted a sandwich instead. After she tried it she decided she liked it. I added orzo pasta instead of rice.

The BOGO Zatarain’s isn’t the one needed for the recipe – but it’s only $1.49 Alice! I almost tried to substitute with one of the BOGO ones but I chickened out 🙂

Do you cook the rice before putting it in the slow cooker?

Hey Erin! Yes – you cook the rice before putting it in, but you don’t put the rice in until the end of the day (really just to warm and mix together, not to cook.) Hope that helps!

I just cooked this last night for dinner…it was fabulous! I dished up the leftovers for my husband to take for lunch today at work…he said it was just as good, if not better, than it was last night. Highly recommend this recipe.
