The PERFECT Chicken Noodle Soup Recipe – SO GOOD!
Several years ago, my husband and I snuck out of town for a conference he attended WAAAAY up in Rhode Island, and they had a HUGE snow storm (over 20 inches – yikes!). We didn't bring Mrs. Potts along for that trip, but with it being so cold and icy, I kind of wish I had so I could have whipped up this crockpot chicken noodle soup. It is just TOO good, and is really a frugal meal too.

Crockpot Chicken Noodle Soup Ingredients:
- boneless, skinless chicken breasts
- yellow onion
- carrots
- celery
- garlic
- thyme
- rosemary
- poultry seasoning
- salt
- pepper
- bay leaf
- chicken stock
- egg noodles (or see the recipe card below how to make your own!)
- fresh parsley
Here's how to make slow cooker chicken noodle soup:
- Add chicken breasts to the bottom of your slow cooker. Top with the onions, carrots, celery, garlic, thyme, rosemary, poultry seasoning, salt, pepper, and bay leaf. Add your chicken stock and stir to combine. Cook for 6 – 8 hours on low or 3 – 4 hours on high.
- Remove your chicken breasts and shred, then discard your bay leaf. Add the chicken back into the crockpot and add your uncooked egg noodles (or homemade noodles). Turn the crockpot to high and cook until your noodles are tender.
- Serve garnished with minced fresh parsley, if desired.

- 1 1/2 lbs boneless, skinless chicken breasts
- 1 large yello onion diced
- 3 large carrots peeled and sliced
- 2 stalks celery sliced
- 4 cloves garlic minced
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp poultry seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 bay leaf
- 8 cups chicken stock
- 3 cups wide egg noodles or you can make your own homemade noodles too!
- fresh parsley minced for garnish
Homemade Noodle Ingredients (if you choose to make your own!)
- 2 whole eggs beaten
- 1/4 cup water
- 1 pinch salt
- 2 Tbsp shortening
- 1 - 1 1/2 cups all-purpose flour

How to make Chicken Noodle Soup
- Add chicken breasts to the bottom of a 6-quart or larger slow cooker. Top with onion, carrots, celery, garlic, dried thyme, dried rosemary, poultry seasoning, salt, pepper, and bay leaf.
- Pour in chicken stock and stir to combine. Cover and cook on low 6 - 8 hours or on high 3 - 4 hours.
- Remove chicken and shred; discard bay leaf. Return chicken to slow cooker and add uncooked egg noodles (or the homemade if you went that route!). Turn to high, cover and cook for an additional 20 - 30 minutes or until egg noodles are tender. **Note if you are using the homemade noodles this step will only take about 10 minutes!**
- Serve garnished with minced fresh parsley, if desired.
Homemade Noodle Instructions (if you choose to make your own!)
- Earlier in the day prior to making your soup, mix together your eggs, water, salt, shortening, and flour to form a stiff dough.
- Continue to mix in as much flour as possible, and let the dough rest for a few minutes. Roll the dough out on a floured counter top to 1/8 inch thickness.
- Use a pizza cutter or to cut into strips about 1/2 inch wide and 3 inches long. Dust lightly with flour, and leave to dry for a few hours while the soup cooks
- Add the noodles just as you would the egg noodles listed above - however, you'll only need to cook these homemade noodles for about 10 minutes, or until tender.
