Ingredients

Chicken Noodle Soup Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1 large yello onion diced
  • 3 large carrots peeled and sliced
  • 2 stalks celery sliced
  • 4 cloves garlic minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp poultry seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 8 cups chicken stock
  • 3 cups wide egg noodles or you can make your own homemade noodles too!
  • fresh parsley minced for garnish

Homemade Noodle Ingredients (if you choose to make your own!)

  • 2 whole eggs beaten
  • 1/4 cup water
  • 1 pinch salt
  • 2 Tbsp shortening
  • 1 - 1 1/2 cups all-purpose flour

Instructions

How to make Chicken Noodle Soup

  • Add chicken breasts to the bottom of a 6-quart or larger slow cooker. Top with onion, carrots, celery, garlic, dried thyme, dried rosemary, poultry seasoning, salt, pepper, and bay leaf.
  • Pour in chicken stock and stir to combine. Cover and cook on low 6 - 8 hours or on high 3 - 4 hours.
  • Remove chicken and shred; discard bay leaf. Return chicken to slow cooker and add uncooked egg noodles (or the homemade if you went that route!). Turn to high, cover and cook for an additional 20 - 30 minutes or until egg noodles are tender. **Note if you are using the homemade noodles this step will only take about 10 minutes!**
  • Serve garnished with minced fresh parsley, if desired.

Homemade Noodle Instructions (if you choose to make your own!)

  • Earlier in the day prior to making your soup, mix together your eggs, water, salt, shortening, and flour to form a stiff dough.
  • Continue to mix in as much flour as possible, and let the dough rest for a few minutes.  Roll the dough out on a floured counter top to 1/8 inch thickness.
  • Use a pizza cutter or to cut into strips about 1/2 inch wide and 3 inches long. Dust lightly with flour, and leave to dry for a few hours while the soup cooks
  • Add the noodles just as you would the egg noodles listed above - however, you'll only need to cook these homemade noodles for about 10 minutes, or until tender.
