Pork Chile Verde – Lower in Carbs Too!

Ingredients for Lower Carb Pork Chile Verde:
- olive oil
- boneless pork chops
- ground cumin
- ground coriander
- yellow onion
- celery
- garlic cloves
- jalapeno
- mild salsa verde
- chicken stock
- lime juice
- salt
- pepper
- Monterey jack cheese
- crushed red pepper flakes
How to make Pork Chile Verde on the Stovetop:
1. In large stock pot or Dutch oven over medium heat, add olive oil. Add pork and saute 5 minutes, adding cumin and coriander after 2 minutes. Then, add onions and celery and cook 5 minutes.
2. Add garlic and jalapenos and cook 1 minute.
3. Add salsa verde and chicken stock to pot and stir. Bring to boil, then reduce to simmer. Let simmer 15 – 30 minutes.
4. Mix in lime juice, then season with salt and pepper. Garnish with cheese and crushed red pepper flakes, if desired.
Lower Carb Pork Chile Verde
Ingredients
- 1 tbsp olive oil
- 1 lb boneless pork chops cut into 1/2-inch pieces
- 1 tbsp ground cumin
- 1 tsp ground coriander
- 1 large yellow onion diced
- 1 celery stalk diced
- 4 garlic cloves minced
- 1 jalapeno minced
- 8 oz mild salsa verde
- 5 cups chicken stock
- 2 tbsps lime juice
- salt
- pepper
- 1/2 cup Monterey jack cheese shredded for garnish
- 1/2 tsp crushed red pepper flakes for garnish
Instructions
