Peek-a-Boo Pumpkin Pound Cake
Fall baking is in full swing at our house, and this peek-a-boo pumpkin pound cake might just be my new favorite treat of the season. My girls thought it was pure magic when we sliced into it and saw the little pumpkin shape hiding inside! This recipe is perfect for bringing dessert to a fall gathering or if you just want to make something special for the weekend.
It's easy to make this dessert (with the sweetest surprise inside), just follow the step by step instructions below!
What You’ll Need:
- Pumpkin cake (homemade or from a mix)
- Pound cake (homemade or from a mix)
- Cream cheese frosting (homemade or store-bought, no judgment here!)
- A small to medium pumpkin-shaped cookie cutter
- Loaf pan
How to Make a Peek-A-Boo Cake:
Bake your pumpkin cake in a 9×13-inch pan and let it cool completely. It's easiest to line your pan with parchment paper so you can lift out your cooled cake and transfer to a cutting board or flat surface.
Level off the top with a knife, then use your pumpkin-shaped cookie cutter to cut out as many little pumpkins as you can. Set them aside.
Mix up your pound cake batter according to the recipe or package directions.
Add a thin layer of pound cake batter to the bottom of a greased 9×5-inch loaf pan.
Line up the pumpkin cutouts vertically in a row down the center of the pan, this is your hidden surprise!
Pour the remaining pound cake batter over and around the pumpkin shapes, making sure they’re completely covered.
Bake according to your pound cake directions, then let the cake cool completely before removing it from the pan.
Frost generously with cream cheese frosting and add a sprinkle of pumpkin pie spice on top if you’re feeling fancy.
