Jalapeño Popper Chicken

This mouthwatering Jalapeño Popper Chicken is stuffed with creamy cheese, spicy jalapeños, and crispy bacon – this is one that the whole family will love!

This recipe is done and on the table in under 20 minutes which is such a win on busy nights. It pairs so well with your favorite easy side dishes like a tossed salad, mashed potatoes, or corn on the cob!

Ingredients for Jalapeño Popper Chicken:

  • 6 bacon slices, chopped
  • 6 boneless skinless chicken breasts
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 6 oz cream cheese, softened
  • 2 jalapeno peppers, seeded and minced
  • 1 cup cheddar cheese, shredded

How To Make Jalapeño Popper Chicken:

1. Preheat oven to broil. In a large skillet, cook bacon over medium heat until crisp; drain, and set aside.

2. Meanwhile, sprinkle each side of chicken with garlic powder and pepper. In a large cast-iron skillet or ovenproof skillet, cook chicken in hot oil, in batches if necessary, 5 – 6 minutes per side or until browned and fully cooked.

3. In a small bowl, combine cream cheese and jalapenos, microwaving if needed to make smooth. Spread over chicken, and sprinkle with cheddar cheese.

4. Transfer skillet to oven, and broil 2 – 3 minutes or until cheese melts. Sprinkle each piece with bacon to serve.
