Italian Shrimp Over Polenta
If you're looking to add a little bit of variety to your weekly menu plan and try some new dishes, this Italian Shrimp over Polenta is perfect.
It's full of delicious flavor, protein, and it is SO easy to cook! You can be a little adventurous with this dish without spending an hour in the kitchen. Now THAT is my kind of meal!
I love serving this dish with a nice big salad on the side or whatever veggies you might have on hand! Your family will love this one-of-a-kind dinner.

- Polenta
- Uncooked shrimp
- Spaghetti sauce
- Fresh Parmesan cheese
What is Polenta and how to cook it
Polenta is made from ground corn and has a similar texture to grits – a little gritty but a little smooth. It's full of flavor because of the corn and you can use it in so many different ways to give a little variety to your menu!
There are a few ways to cook polenta (I've even mashed it before!) but this method gives you crispy slices to pair perfectly with the shrimp.
Since your polenta will likely come in a roll (kind of like sausage 😉 ), you can remove the plastic and easily cut into slices.
How to make Italian Shrimp over Polenta
Start by coating a large, nonstick skillet with cooking spray. Heat over medium-high until skillet is hot.
Add polenta slices to skillet and cook about four minutes on each side until the edges are crispy. Remove polenta from skillet and keep warm.
Spray your skillet again and add the shrimp. Cook 2-3 minutes until shrimp turn pink.
Stir in spaghetti sauce, and cook 2-3 minutes more (until sauce is heated through).
Serve polenta on a plate and spoon shrimp & sauce overtop. Sprinkle with fresh Parmesan cheese and enjoy!

Ingredients
- 16 oz roll polenta, cut into 12 slices
- 1 lb uncooked large shrimp, peeled and deveined
- 24 oz jar spaghetti sauce
- 4 tbsp shredded fresh Parmesan cheese
Instructions
- Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
- Arrange polenta slices in skillet; cook about 4 minutes on each side or until edges are crispy. Remove from skillet, and keep warm.
- Recoat skillet with cooking spray, and add shrimp. Cook 2-3 minutes or until shrimp turn pink. Stir in spaghetti sauce, and continue cooking 2-3 minutes until heated through.
- Serve 3 slices of polenta on each plate. Spoon shrimp and sauce evenly over polenta; sprinkle with Parmesan cheese, and serve immediately.
