Italian Shrimp Over Polenta

Ingredients

  • 16 oz roll polenta, cut into 12 slices
  • 1 lb uncooked large shrimp, peeled and deveined
  • 24 oz jar spaghetti sauce
  • 4 tbsp shredded fresh Parmesan cheese

Instructions

  • Coat a nonstick skillet with cooking spray; place over medium-high heat until hot.
  • Arrange polenta slices in skillet; cook about 4 minutes on each side or until edges are crispy. Remove from skillet, and keep warm.
  • Recoat skillet with cooking spray, and add shrimp. Cook 2-3 minutes or until shrimp turn pink. Stir in spaghetti sauce, and continue cooking 2-3 minutes until heated through.
  • Serve 3 slices of polenta on each plate. Spoon shrimp and sauce evenly over polenta; sprinkle with Parmesan cheese, and serve immediately.
