Hurry Up And Eat! Peanut Butter Quesadillas

I don’t know about you, but I have a really hard time figuring out dinner ideas when my hubby’s not around at dinner time!  I’m not a meat-and-potatoes kind of girl; just give me a piece of chocolate, call it dinner, and I’m one happy momma!  But I know as a mom I’m really not supposed to feed my kids chocolate for dinner  . . . so this was a great alternative 🙂 . As I contemplated what on earth to feed my rowdy bunch before soccer and baseball practice, I decided to try these out (I think I’d been looking over the Publix deals WAAAAYYYY too long and couldn’t see anything besides BOGO Peter Pan and Taco Kits!)  I really couldn’t believe how good these were, and a great quick dinner on a busy weeknight! 

 Here’s what you’ll need (per quesadilla) . . . 

 1 fajita shell 

 Taco Bell Home Originals Dinner BOGO $2.69 (I keep grabbing these on sale and then using up the tortillas – I have six packages of taco seasoning and salsa in my pantry because I’ve stolen the tortillas for other recipes!); or $1/1 Mission Tortillas 8/1/2010 SS Insert (exp 9/13/2010) 

 1 1/2 – 2 tablespoons peanut butter 

Peter Pan Peanut butter 13-16.3oz jar BOGO $2.09, $1.50/4 ConAgra Foods Products, $1/2 Peter Pan from August All You, or $.60/1 from 8/1 SS 

 1 tsp. margarine or butter (we used margarine) 

 sliced bananas (optional, but I thought they were so much better with the bananas, not so sticky!) 

 jelly (also optional, but you can warm it up a little for dipping; my son liked it with the jelly but I was much happier with the bananas!)  

Spread 1 1/2 - 2 tablespoons peanut butter over one half of tortilla. (Add a few sliced bananas if you want - I LOVED it with bananas!)

  

Melt margarine in skillet on medium heat and fold tortillas in half to cook. Cook on medium heat for two minutes.

  

Flip tortillas on to other side and cook two more minutes.
Flip quesadillas over and cook two more minutes on other side.

  

  

Slice into thirds (I use my pizza cutter to slice). Serve and enjoy - YUMMMM!

 Apples If you’re in a hurry Crunch Paks are on sale $2.50 at Publix, but it’s probably cheaper to buy fresh apples even if they’re not on sale!

    Diane – I’m so glad I’m not the only one! My kids would MUCH prefer cereal to a real meal, so it makes all of us happy! 🙂

    roflmbo… so it’s not just me who doesn’t cook when daddy’s not home??? I had a friend who said, when I do that, I tell my kids they’re not as important as dad. I have thought about that, but really, when dad’s gone, all bets are off. cereal. waffles. nachos. 😀 oh! and right there in front of teh TV, too! 😛
