Oh my, this is some goooooood stuff! My son devoured his serving last night in three minutes flat, and told me later that he bet Elvis would have kept it all to himself! It's super easy, and I love that the fruit, protein and carbs are all rolled into one. (Do you think that's what the folks who thought up the Food Pyramid were hoping for?)
This is so easy that you can make it as a quick dinner on a busy weeknight or enjoy on a lazy Saturday morning (anybody seen a lazy Saturday morning lately?)Â Whenever you decide to have it, it'll be a little different take on your traditional French Toast, and I'm betting your kids will be thrilled.
Here's what you'll need . . .
- 3Â Eggs
- 3/4Â cup milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- Peanut Butter
- 1 Banana cut into thin slices
- 8 Slices Bread
Directions
Mix egg, milk, cinnamon, and vanilla in small bowl (a pie plate works great for easy dipping). Spread all slices of bread with small amount of peanut butter (I just covered the bread with a thin layer of peanut butter; not too much or it will taste heavy!)
Add bananas to half the slices of bread, then make peanut butter banana sandwiches. Dip sandwich in egg mixture, then grill in skillet or frying pan until golden brown. Serve with warm syrup, and a little cool whip if you want your kids to be in yummified heaven!
