Green Chicken Pasta Salad – Served Warm OR Cold
We tried this Greek Chicken Pasta Salad Mediterranean recipe for the first time a few years ago (following a little craziness we had in our family~ read more HERE.) I absolutely loved it, my husband really liked it, but it wasn't quite my kids favorite being real honest (so they stuck with pasta and rotisserie chicken ~ not the worst meal of all time so I'm calling it a win!)

I made it again this week as I've been focusing a ton on menu planning (we just eat better and more frugally that way, and it saves so much and money each week!) It's so simple and fast, works great as a quick easy meal, and the leftovers are perfect to pack in lunches during the week. Here's how to make this one if you need a yummy summer weeknight meal today!
Greek Chicken Pasta Salad Ingredients:
- Penne Pasta
- Rotisserie Chicken
- Red Onion
- Artichoke Hearts
- Kalamata Olives
- Feta Cheese
- Greek Dressing
Greek Chicken Pasta Salad
- 16 oz Penne Pasta
- 2 Cups Rotisserie Chicken Shredded
- 1/2 Cup Red Onion Diced
- 1 Cup Artichoke Hearts Quartered
- 1/2 Cup Kalamata Olives, Pitted Sliced
- 1/2 Cup Feta Cheese Crumbled
- 1 Cup Greek Dressing
- Cook pasta according to package directions; drain and rinse with cool water.
- Add shredded chicken and remaining ingredients and toss well. Add additional dressing if desired.
- Serve immediately warm or make ahead and refrigerate.
