Cooler weather is here and that means it's time for some hearty beef stew around our house. This beef stew will definitely do the trick. I'll add a pan of cornbread on the side and dinner is done!

If you don't have time to sear the beef go ahead and throw it in with all the ingredients and slow cook all day. It will turn out perfect!

This recipe doesn't have any additional water added. But if you'd like to add water to the stew, add just enough to cover the ingredients before cooking. Remember that stew is thick so it won't be a soup like consistency. It's more of a hearty-stick-to-your-ribs dish!

- celery

How to Make Beef Stew in Crock Pot
Cooking homemade beef stew in the crock pot is so easy and sooo delicious. In fact, this recipe is a one and done beef stew. Once you have the carrots, celery and onions chopped you simply toss them in the slow cooker. Add cut up beef and tomato juice then cover and let it simmer all day.
At the end of the cooking time you'll make a little cornstarch slurry, mix that in and serve it right up!
How can I make my beef stew more flavorful?
Searing the meat beforehand will definitely add a richer, deeper flavor. So, if you have time go ahead and brown the beef in a bit of olive oil (just until it's browned a touch) then add to the slow cooker.
How do you make stew meat tender?
Slow and steady cooking is the key here. This helps stew meat break down and become very tender. This is one reason the crockpot is perfect for this beef stew recipe.

- slow cooker
Ingredients
- 2 lb beef chuck roast, cut into pieces
- 1 large yellow onion, sliced
- 6 stalks celery, sliced
- 6 whole carrots, sliced
- 2 tsps salt
- 1 Tbsp sugar
- 2 cups tomato juice
- 2 Tbsps cornstarch
Instructions
- Place all ingredients except cornstarch in slow cooker.
- Cover and cook on low 6-8 hours.
- Mix together cornstarch and 2 tablespoons water and add to slow cooker; stir well. Cover and cook another 30 minutes.
Notes
- Place all ingredients except cornstarch in a gallon size zip-top bag. Label and freeze.
- When ready to cook, thaw in refrigerator overnight.
- Place contents of bag in a slow cooker. Cover and cook on low 6-8 hours.
- Mix together cornstarch and 2 tablespoons water and add to slow cooker; stir well. Cover and cook another 30 minutes.
