Ingredients

  • 2 lb beef chuck roast, cut into pieces
  • 1 large yellow onion, sliced
  • 6 stalks celery, sliced
  • 6 whole carrots, sliced
  • 2 tsps salt
  • 1 Tbsp sugar
  • 2 cups tomato juice
  • 2 Tbsps cornstarch

Instructions

  • Place all ingredients except cornstarch in slow cooker.
  • Cover and cook on low 6-8 hours.
  • Mix together cornstarch and 2 tablespoons water and add to slow cooker; stir well. Cover and cook another 30 minutes.

Notes

To turn this recipe into a freezer meal follow these instructions:
  1. Place all ingredients except cornstarch in a gallon size zip-top bag. Label and freeze.
  2. When ready to cook, thaw in refrigerator overnight.
  3. Place contents of bag in a slow cooker. Cover and cook on low 6-8 hours.
  4. Mix together cornstarch and 2 tablespoons water and add to slow cooker; stir well. Cover and cook another 30 minutes.
