Beef & Sweet Potato Chili
If you're looking for a new chili recipe, this is one of our favorites! This beef and sweet potato chili is packed with protein and bold flavor. Plus, it's made right in your slow cooker with ingredients you feel good about serving your family.
I love this recipe because it's so easy to dump and go. Let your slow cooker do the heavy lifting while you take care of the busy-ness of life and then you've got a delicious dinner to easily get on the table at dinnertime. It's the best of both worlds!

Ingredients
- Ground beef
- Green pepper
- Yellow onion
- Minced garlic
- Sweet potatoes
- Fire-roasted diced tomatoes
- Chili powder
- Salt & pepper
- Monterey Jack cheese (or whatever you have on hand!)
How to make chili with sweet potatoes
Start by dicing up your veggies. You'll want to chop your green bell pepper, onion, and sweet potatoes.
On the stove, sauté the beef, bell pepper, onions, and garlic. Cook over medium heat until the ground beef is brown & crumbly. Drain any fat and transfer entire mixture to a large (5-7 quart) slow cooker.
Next, you'll stir in your sweet potatoes, two cans of fire-roasted diced tomatoes, chili powder, salt, and pepper.
(Note: if all you have on hand are regular diced tomatoes, you can use those! The fire-roasted give add a little smoky flavor to the dish, but don't stress over running to the grocery store.)
Put the lid on and let your slow cooker work it's magic on low for six hours.
Top each serving with the shredded Monterey Jack cheese. (P.S. this is another ingredient you can use what you have! The Monterey Jack gives a little tang but it this dish is SO yummy either way – feel free to use mozzarella, cheddar, etc.)
Beef and Sweet Potato Chili
Ingredients
- 2 lb lean ground beef
- 1 green bell pepper, chopped
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 2 medium sweet potatoes, peeled and cut into chunks
- 2 (14.5 oz) cans fire-roasted diced tomatoes
- 3 tbsp chili powder
- ½ tsp salt
- ¼ tsp pepper
Instructions
- In large skillet, cook beef, bell pepper, onions, and garlic over medium heat until beef is browned and crumbly; drain and transfer to 5 to 7-quart slow cooker.
- Stir in sweet potatoes, tomatoes, chili powder, salt, and pepper.
- Cover and cook on low 6 hours.
- Top each serving with shredded cheese.
