Beef and Sweet Potato Chili

Ingredients

  • 2 lb lean ground beef
  • 1 green bell pepper, chopped
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cut into chunks
  • 2 (14.5 oz) cans fire-roasted diced tomatoes
  • 3 tbsp chili powder
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  • In large skillet, cook beef, bell pepper, onions, and garlic over medium heat until beef is browned and crumbly; drain and transfer to 5 to 7-quart slow cooker.
  • Stir in sweet potatoes, tomatoes, chili powder, salt, and pepper.
  • Cover and cook on low 6 hours.
  • Top each serving with shredded cheese.
