What’s For Dinner? Pepperoncini Sub Sandwiches

I don’t know about you, but I just love watching Paula Deen on TV.  Her show is just about the only television I’ll sit down to watch, and I literally find myself having talking back to her while she’s on my television screen!  (And believe it or not, my three year old likes her almost as much as Sesame Street!)  It’s been awhile since I’ve watched her show, but when a friend of mine had her magazine at gymnastics the other day, it was all I could do not to jump out of the bleachers and head on over to Publix to get my own copy (I love looking at her recipes!)

 

This is her recipe for Pepperoncini Sub Sandwiches that was perfect for a busy weeknight at our house, and I hope you enjoy them too!  It should be a little cheaper than heading through the drive-thru (although those $5 subs aren’t too bad a deal!), and I’m betting you’ll have one happy hubby tonight.  Here’s what you’ll need . . .

 

Pepperoncini Sub Sandwiches

1 17 inch loaf French Bread $1.99 at Publix; their sub rolls looked so yummy, but I just couldn’t make myself grab those – the $3.49 pricetag for just two was too steep for me!

1 cup mayonaise (we used light) Kraft Mayo BOGO $3.99, use $1/2 Kraft Miracle Whip Dressing or Mayo , $1/2 Kraft Mayo or Miracle Whip 9/26/2010 SS Insert (exp 11/7/2010) , stack with $1/2 Kraft Products Target Store Coupon 2 tsp. red wine vinegar $0.50/1 Heinz Vinegar or Apple Cider Vinegar , or $1/1 Regina Vinegar or Cooking Wine

1 tsp. Italian Seasoning

5 green lettuce leaves

1/2 pound thinly sliced ham  Oscar Mayer Deli Fresh Shaved Meats $3, $1/2 Oscar Mayer Lunchmeats , $1/2 Oscar Mayer Lunchmeat Packages 9/26/2010 SS Insert (exp 11/7/2010), Stack with Oscar Mayer Deli Fresh Lunchmeat Items, TARGET coupon

1/2 pound thinly sliced turkey Oscar Mayer Deli Fresh Shaved Meats $3, $1/2 Oscar Mayer Lunchmeats , $1/2 Oscar Mayer Lunchmeat Packages 9/26/2010 SS Insert (exp 11/7/2010), Stack with Oscar Mayer Deli Fresh Lunchmeat Items, TARGET coupon

1/4 pound Swiss Cheese (thinly sliced) the Publix brand was $2.19, you may also be able to use the  $1/2 Target Market Pantry Cheese coupon if your store allows Target coupons as a competitor

1 tomato

1/2 cup sliced pepperoncini peppers Publix brand was $1.79, probably cheaper at Kroger or Walmart (but it sure was convenient to grab it at Publix!)

Slice bread in half lengthwise.  Pull out excess bread from inside slices and discard (so that you have enough room for the stuffin’s!)  In small bowl combine mayo, vinegar, & seasoning.  Spread mixture on bread.  Arrange lettuce on bottom half of bread, top with ham, cheese, turkey, tomato, & peppers.  Cover with remaining bread half & cut in slices.

Serve with. . .

    this sounds delicious! i had no idea that publix would take a market pantry coupon for the bakery or deli? have you tried it before?

    I ate at the Paula Dean buffet Sunday and thought of you. I took a picture of the kids with a cardboard version of Paula so I could e-mail it to you. The food was disapointing and definitely not worth $20 per person!

      Where’s the Paula Dean Buffet? (I think I’d take Claudia Sanders Buffet over just about anything in KY, surely it’s not there!)
